Taglietelle with curried marscapone, ham and spinach
Oooh, yummy. Comfort food. For vegetarians, this is quite tasty without the ham too.
Olive oil
1 clove garlic, crushed
1 onion
2 teaspoons thai green curry paste*
250g (1/2 pound) thick sliced ham
1/2 packet frozen spinach (or 5 fresh silverbeet leaves - or any other spinachy thing you have)
1 cup marscapone (or, I use 125g light cream cheese mixed with 1/2-1 cup milk)
2 tablespoons chopped basil
ground black pepper
handful parmesan cheese
* I've found that the green curry paste I can find in the US is much stronger than the stuff I get in Oz, so you might want to cut down the amount of curry paste to 1 teaspoon the first time.
Fry garlic, onion and curry paste in olive oil over low heat. Add ham and spinach, then marscapone and basil. cook until warmed through. Add pepper to taste. Remove from heat, add parmesan and stir through cooked taglietelle or fettucine.
