Simple Spinach Lasagne
1 packet frozen chopped spinach, thawed
1 large tub cottage cheese
1 egg
1 onion
1 packet instant lasagne sheets*
1 large jar tomato pasta sauce
1 packet grated cheddar cheese
Pinch of nutmeg
salt/pepper
Preheat oven to 180oc/350oF. Cook the onion until translucent. Cool and combine with cottage cheese, spinach, egg, a handful of cheddar, nutmeg and salt/pepper. Using a large lasagne dish, cover the bottom with a thin layer of the pasta sauce, followed by lasagne sheets, then cottage cheese mixture, then sauce again, pasta etc. Finish with a layer of pasta, topped with the remaining cheddar cheese.
Bake for 45-60 mins.
* Note: this recipe has very little liquid, and although most lasagne sheets these days do not require pre-cooking, I have the best results when I cook them for 5 mins in boiling water, or even soak them in hot water before using.
