Banana Cake
This is the most delicious, moist, dense, not-too sweet cake.
125g unsalted butter
1 1/2 cups sugar
2 eggs
1 cup mashed ripe banana
few drops vanilla
1 2/3 cups plain flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon allspice
1/2 cup buttermilk (or milk with 1 teaspoon lemon juice)
Preheat oven to 180oC. Grease a 20cm cake tin.
Cream butter and sugar. Beat in eggs, banana and vanilla. Sift dry ingredients and stir in, alternating with buttermilk. Bake for 45 mins or until a knife comes out clean from the centre. Cool in tin for a few minutes before turning out to cool.
If you're a sweet tooth, here's a recipe for cream cheese frosting that goes very well with it:
125g cream cheese
50g butter
few drops vanilla
1 cup icing sugar (confectioner's sugar)
Sift Icing sugar and beat all ingredients together well. Spread on cake when it is cool.
