Boiled Orange Cake
Huuurrrrgh. Decadent. Not very sweet, but very heavy and very rich. In a word, awesome.
2 large naval oranges
5 eggs
1 cup sugar
250g almond meal
1 teaspoon baking powder
Boil oranges, whole, for 45 mins. Grease and line a deep cake tin. Preheat oven to 180oC/350oF. Drain and cool oranges, reserving a couple of tablespoons of the liquid. Blend the oranges (with skin on) until smooth. Beat eggs and sugar until thick. Add oranges, almond meal and baking powder. Pour mixture into cake tin and bake for 1 hour.
If you like, you can top the cake with dark chocolate. Melt the chocolate in a bowl over a saucepan full of hot water, then spread over the cake.
