My favourite Recipes

These are recipes I love and I hope you will too. Most of them are very simple and all of them are delicious. Not all of them have precise measurements, for which I apologise, but you should be able to wing it. Enjoy!

Chicken puddings

Holy crap. These things might look like something your cat coughed up, but they taste phenomenal. They're good for a cocktail party kind of affair - little and tasty.

1 bunch coriander (cilantro), chopped
500g (1 pound) minced chicken
2 cloves garlic
1/4 cup oyster sauce
1 tablespoon fish sauce
300ml coconut cream (just over 1 cup)
salt and pepper

Preheat oven to 180oC/350oF. Combine ingredients in a bowl, lastly adding the coconut milk slowly while mixing well. Taste test with a small piece in a frying pan. Adjust flavour with oyster sauce and salt/pepper. spoon into small muffin tins. Cook for 10 mins. Garnish each pudding with a coriander leaf. Try not to eat too many while you're cooking.
