My favourite Recipes

These are recipes I love and I hope you will too. Most of them are very simple and all of them are delicious. Not all of them have precise measurements, for which I apologise, but you should be able to wing it. Enjoy!

Chicken, leek and mushroom risotto

1 chicken breast fillet
1 large leek
a handful of mushrooms (dried ones are really good)
1 cup arborio rice
1/2 cup grated parmesan cheese
1 cup white wine
4 cups chicken stock (keep warm in a saucepan on the stove)
1 teaspoon dried rosemary
cracked black pepper
2 teaspoons lemon zest (grated lemon skin)

In a large pan, fry the chicken and leek over medium heat in olive oil. Once chicken is cooked on the outside, add the mushrooms, wine, rosemary and rice. Add enough stock to just cover the rice. Stir on low heat until all the stock is absorbed. Add more stock. Continue until rice is soft. If the stock runs out before the rice is cooked, add hot water. When the rice is cooked, remove from heat and stir through parmesan, lemon zest and pepper.

Made this tonight and fiance said it was the best risotto he has tasted. I added some green beans just so it has something with crunch, and it was magnificent!

Made this tonight...it was soooo good, Swiss brown mushrooms and portables mushroom powder for our local growers market.we loved the lemon zest addition.

Great recipe. I would however always add the rice before adding any liquid and stir it until shiny. Then I add the wine and let it evaporate almost, and then I start with the stock. I think that delivers a better bite at the end. For the rest great flavours!
