Balinese Rice Salad
This doesn't look like much, but everywhere I take it, people ask for the recipe. You might find that some of the ingredients (like the sweet chilli sauce) are hard to find if you're in the US. If you can find an Asian Grocer, you're sure to find it.
5 cups cooked basmati rice, cooled (cook about 2 1/2 cups to get 5 cups)
2 large carrots, grated
1/2 a celery, chopped
1 bunch scallions, chopped
1 bunch cilantro, chopped
1 bunch basil, chopped
Few handfuls peanuts
Dressing:
1/2 cup lemon juice
1/2 cup sweet chilli sauce
2 tblspn brown sugar
2 tblspn fish sauce
1 heaped tblspn fresh grated ginger
1 teaspoon (or more) sesame oil
Combine all, adding basil, peanuts and dressing just before serving.
