My favourite Recipes

These are recipes I love and I hope you will too. Most of them are very simple and all of them are delicious. Not all of them have precise measurements, for which I apologise, but you should be able to wing it. Enjoy!

Pan Couscous with Chorizo and Green Beans

This is a bit of a favourite in our house when we occasionally break out of vegetarianism. It's a real comfort food, very tasty, and insanely easy to make. It's a recipe from Donna Hay Magazine. For a similar, but vegetarian recipe, see couscous with tomato and basil.

Olive oil - 1 tablespoon
Red onion - 1, chopped
Garlic - 1 clove, finely chopped
Fresh red chilli - 1, deseeded and finely chopped
Chorizo sausage - 1, chopped
Chopped canned tomatoes - 1large can
Stock - 2 cups or 500ml
Green beans - 100g, cut into bite sized pieces
Couscous - 1 cup
1 bunch coriander (cilantro) chopped
Lemon wedges, salt and pepper

Heat the oil in a deep frying pan over medium heat. Put the onion, garlic, chilli and chorizo in the pan and fry for 5-6 minutes then add the canned tomatoes, stock and green beans and leave to simmer on a low heat for about 6-8 minutes. Sprinkle the couscous over, season with salt and pepper, cover with a lid and leave to sit for a few minutes, until the couscous has become soft from absorbing the liquid. Add the coriander and serve with the lemon wedges. Serves 2-3.
