Cauliflower Soup
I made the best cauliflower soup in the world the other day. This is what was in it (I think).
1 head of cauliflower, chopped
2 leeks, sliced
1 onion, chopped
about half a bunch of celery, chopped
4-6 cloves garlic
2 chicken stock cubes (for those in Oz, Massel is the best)
2 potatoes, diced
enough water to just cover it all
salt & pepper
1/2 cup cream
handful grated parmesan cheese (optional)
Cook the veges a bit in some olive oil in a large saucepan, then add the water, stock cubes and salt & pepper. Boil for about 15 mins, or until the cauliflower and potatoes are soft. Puree with a hand-held blender or in a conventional blender.
Then add the cream and parmesan. Season with salt and pepper to taste.
