My favourite Recipes

These are recipes I love and I hope you will too. Most of them are very simple and all of them are delicious. Not all of them have precise measurements, for which I apologise, but you should be able to wing it. Enjoy!

ANZAC biscuits

This is a classic Australian recipe. The ANZACs were the Australia New Zealand Army Corps in WWI. The story goes that these were the cookies that soldiers wives and mothers sent to them, because, containing no eggs or milk, they wouldn't go bad. They're delicious too.

1 cup rolled oats
125g (1 stick) butter
1 1/2 teaspoons Baking soda
1 tablespoon Golden Syrup*
2 tablespoons boiling water
3/4 cup coconut
1 cup plain flour
1 cup sugar

*(for Americans, you can sometimes find this in the english section of the supermarket. I've also tried maple syrup, which worked ok)

Mix dry ingredients together in a bowl. Melt butter and golden syrup together. Add baking soda mixed in water to the golden syrup mix. Add liquids to dry ingredients. Drop teaspoonfuls onto a baking tray and bake at180oC (350oF) for 20 min.
When they first come out of the oven they are very soft. Don't panic. As they cool they will harden up and be crispy on the edges and chewy in the middle.
