Ceals' smoked salmon from Montreal

Soy sauce
Ginger
Garlic
Black peppercorns
Whole cardamom
Cloves
Cinnamon sticks
Orange peel.
Marinate the salmon in the soy, ginger and garlic for a few hours. Roughly crush the spices together and combine with orange peel. Put the spice mix in a foil dish in the BBQ for 10 min or so while it builds up some smoke. Put the salmon on a rack above the spices. Cook for 10-15 min. Alternatively, line a wok with foil and toss the spice mix in the bottom. Place the salmon on a rack in the wok and smoke for 10-15 min.
Nice served with Herb and mustard mash.
