Roasted Veggies by Miss Nyree
This doesn't look that amazing written down, but, seriously, it's a taste sensation.
Chop into large pieces and roast any or all of the following vegetables with olive oil, salt and pepper:
cook for ~45 mins: onion, potato, sweet potato, pumpkin, whole garlic cloves, carrots
cook for 20-30 mins: zucchini, roma tomatoes, mushrooms, red capsicum (peppers)
(cooking time varies depending on big the pieces are)
You will also need:
baby spinach
crumbled blue cheese or gorgonzola
balsamic vinegar
Once all veges are cooked (test by checking if potato is soft through), remove from oven and arrange on a bed of baby spinach on a large platter. Crumble blue cheese over the top, then drizzle balsamic vinegar over. Serve warm and watch the looks of ecstasy on your friends' faces.
