My favourite Recipes

These are recipes I love and I hope you will too. Most of them are very simple and all of them are delicious. Not all of them have precise measurements, for which I apologise, but you should be able to wing it. Enjoy!

5 minute strawberry jam

I find this even beter with a combination of berries. The strawberries give it a good consistency, so always include them, but you can try combining them with blackberries and blueberries for a really yummy jam.

2.2 pounds (1kg) strawberries
10.5 oz (300g) sugar
1 vanilla bean

Split vanilla pod with a knife and scrape out seeds. Add the seeds and the pod to the strawberries and sugar in a saucepan. Mush the strawberries up a bit with a spoon and bring to a gentle simmer on medium heat and leave to cook for about 4 minutes more. Remove any scum that forms on the top and leave to cool. Store in sterilised jars and refrigerate.
